These muffins happen to be one of my most favorite “healthy” muffins. Now just because I call them healthy does not mean they lack in flavor. They are full of whole grain goodness that gives them plenty of flavor. The peanut butter gives it a light nutty flavor. The chocolate chips really give this muffin a lovely chocolaty boost.
If you want to make them a little healthier see my notes at the bottom of the recipe. I have experimented with a bunch of different ways to make this diet-friendly as possible but keeping them flavorful.
Chocolate Chip Bran Muffins
|1 cup all-purpose flour or wheat flour||2 tablespoons and 1/2 teaspoon vegetable oil|
|1/2 cup quick cooking oats||1 egg|
|1/3 cup and 1 tablespoon sugar||3/4 cup and 2 teaspoons milk|
|1 teaspoon baking soda||1-3/4 cups and 1 tablespoon bran flakes cereal|
|1/2 teaspoon salt||1/3 cup semisweet chocolate chips|
|3 tablespoons and 1/2 teaspoon peanut butter|
In a bowl, combine the flour, oats, sugar, baking soda and salt; set aside. In a large mixing bowl, beat the peanut butter and oil until combined.
Beat in the eggs and milk. Stir into the dry ingredients just until moistened. Fold in the cereal and chocolate chips.
Fill greased or paper-lined muffin cups two-thirds full.
Bake at 400 degrees F for 14-17 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.
